Three Flavor Refrigerator Cookies

Ingredients:
1 cup shortening
1 cup sugar
1 egg
2 cups flour
½ teaspoon baking soda
½ teaspoon salt
Procedure:
Cream shortening and sugar, add egg and beat.
Soft flour, baking soda and salt
Add to the mixture
Divide dough in thirds.
Ingredients for Variations:
Lemon extract
Cocoa
Nutmeg
Cloves
Peanut Butter
Grated Orange Rind
Milk
Lemon: Add ¾ teaspoon lemon extract to 1/3 of the dough.
Cocoa Spice: Mix 2 tablespoons cocoa, ¼ teaspoon each of nutmeg, cloves and 1 tablespoon water. Add to 1/3 of dough.
Peanut Orange: Mix ¼ cup peanut butter, 1 tablespoon grated orange rind, and 2 teaspoons milk. Add to 1/3 of dough.
Mix each third of the batter well and shape on lightly floured board in rolls which are 2 inches in diameter.
Wrap each roll in waxed paper and chill overnight.
Slice thinly and bake on greased cookie sheet at 400 degrees for 10 – 12 minutes.
