"Mom's Cheese Cake Deluxe" by Claudia March
Ingredients: 1 med. can crushed pineapple.
Graham crackers
2 (8 oz) Cream Cheese
3/4 Cup Sugar
5 eggs
1 tsp. Vanilla extract
1/2 tsp. Almond extract
Topping: 1 pint sour cream
1/2 cup sugar
1 tsp. vanilla extract
1/2 tsp. almond extract
Pan needed: Spring pan.
Drain can of crushed pineapple.
Make graham cracker crust in a spring pan according to directions on graham cracker box.
Bake in 350 deg. oven to 8 minutes.
Cream together: 2 (8 oz) cream cheese
3/4 cup sugar
Add: 5 eggs (add these 1 at a time and best well)
Add: 1 tsp. vanilla extract and 1/2 tsp. almond extract.
Add: Drained pineapple and miss well.
Pour ingredients into your spring pan.
Bake for 35 minutes at 350 deg. Remove from oven, then set your oven for 500 deg.
Mix together: 1 pt. Sour Cream
1/2 cup sugar
1 tsp. vanilla extract
1/2 tsp. almond extract
Pour above mixture over the baked mixture in spring pan. Place in the 500 deg. oven for 5 minutes.
After removing from oven, grate semi-sweet chocolate on top.
Refrigerate immediately after baking. Chill and serve.
This was my Mom's gift to my as my birthday cake every year since I was about 10 years old. Nothing like this--delicious.
