Salmon Ball by Noreen Dick

1 (15 ½ oz.) can of salmon
1 (8oz.) package cream cheese, softened
1 tablespoon lemon juice
1 tablespoon grated onion
1 teaspoon prepared horseradish
1/8 teaspoon dillweed
Salt, pepper, garlic powder to taste
3-4 tablespoons fresh parsley
¼ cup chopped walnuts or pecans

In a mixing bowl, with hand-held mixer, beat the cream cheese, lemon juice, onion, horseradish, dill, salt, pepper and garlic powder until well blended. Drain and flake the salmon, removing skin and bones. This is the most time consuming part! Beat salmon into cheese mixture at low speed until well blended. Chill until firm. Shape into a ball using wet hands. Coat with parsley and nuts. Cover and chill thoroughly. Serve with crackers. I use crackers without a strong taste of their own, such as water crackers, so  the  taste of the salmon comes through.
