MELKTERT by Anna-Marie Zietsman
This recipe is as South African as it gets!
My mother has always used this recipe, not sure where it originated from. It is easy and will make three pies.
Crust
2 cups of flower
½ cup sugar
½ tsp baking powder
125ml butter
2 eggs
½ tsp salt
Mix dry ingredients and rub in butter. Add beaten eggs and 1 tbsp of water. Roll out and put in pie dishes. Bake till light brown.
(When I am short on time I just use graham cracker crusts as a substitute. )
=================================================
Pie filling
8 cups milk
250 ml butter
¼ tsp salt
4 eggs
1 cup sugar
1cup corn starch
2 tsp vanilla
Cook milk, butter and salt together. Beat eggs well and add sugar and corn starch. Add to cooking milk mix while stirring. Last add the vanilla and pour into crusts.
Sprinkle with cinnamon.
