New England Blueberry Muffins by Jane Deane
1 cup sugar
½ cup softened butter or margarine
2 eggs
½ cup milk
2 cups all purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 – 1 ½ cups fresh blueberries
Combine sugar, butter, eggs and milk in mixing bowl. Beat well. Blend flour, baking powder and salt together. Add wet mixture to dry until well blended, about one minute. Carefully fold in blueberries. Spoon into well-greased muffin cups, filling almost to top of cup. Bake at 350 degrees for 20-25 minutes. Makes 12 large muffins.
