Roasted Greek Salad by Suzy Duck Nieman

Roasted Greek Salad

5 links Italian turkey sausage
zucchini cut into chunks
red pepper – cored, seeded, cut into chunks
summer squash – cut into chunks
onion – chopped as much as you like
small red potatoes, cut up
2 tablespoons olive oil
2 sprigs thyme
½ cup black olives
7 oz. crumbled feta cheese
4 diced tomatoes or 1 can diced
Salt and freshly ground black pepper to taste

Preheat oven to 400 degrees. Brown turkey sausages, cut into 1 inch pieces, in a frying pan while oven is heating. Grease 9x13 pan, or larger pan if needed, with olive oil. Spread whatever vegetables you’re using in the 9x13 pan. Drizzle the olive oil over them, and lay the thyme on top. Bake for 30 minutes.

Top with remaining ingredients, stir a little, and bake for 15 minutes more or until vegetables are done.

An easy dish to make ahead!
