Caryl Skow’s Beef Barley Soup
1 lb. ground beef
2/3 cup pearl barley
2 16 oz. cans tomatoes
10 cups water
½ cup catsup
5-6 sliced carrots
2-3 chopped onions
1 large can broth
Basil to taste
Bay leaf
Brown meat. Add all other ingredients. Simmer for an hour or so.
Caryl Skow was a long time and active member of KRC. She first prepared this soup for one of the simple soup and bread suppers before a Maundy Thursday service. It has been used many times since for the same purpose.
