Classic Chicken Divan by Doris Schmieder


Need:
13 x 9 baking dish

Ingredients:

Large bunch fresh broccoli    OR  2 packages frozen broccoli spears
4 chicken breast halves, cooked
¼ butter or margarine
¼ cup flour (Wondra works well)
2 cups chicken broth
½ heavy cream or fat free sour cream
3 tablespoons sherry or cooking sherry
½ teaspoon salt
Dash of pepper
1 cup shredded parmesan cheese

Procedure:

Cook fresh broccoli in boiling salted water or microwave on high (4 min., stir, 4 min.)
Slice chicken breast halves thinly.
Place broccoli in greased baking dish.

Melt butter or margarine in saucepan.
Blend in flour.
Add chicken broth and cook, stirring constantly until mixture thickens.
Stir in cream, sherry, salt and dash of pepper.

Pour ½ of the sauce over the broccoli.
Top with chicken slices.
To the remaining sauce, add ½ cup shredded cheese.
Pour over chicken and sprinkle with additional shredded cheese.

Bake at 350 for 20 minutes, then broil until sauce is golden brown.
Garnish with sliced peaches, if desired.

Note:  This is a great recipe and can be adapted for low-fat, low sodium diets by using margarine or butter substitute, fat free sour cream and low sodium chicken broth.
