Really Good Oatmeal Cake by Jane Deane

Cake:
1 cup Quick Oats
1 ½ cups boiling water
1 cup brown sugar
1 cup white sugar
½ cup shortening
2 eggs
1½ cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla

Topping:
6 tablespoons white sugar
6 tablespoons butter
½ cup evaporated milk
1 cup coarsely chopped nuts
1 cup coconut
1 teaspoon vanilla

Preheat oven to 350 degrees. Mix Quick Oats with boiling water and let stand for 20 minutes. In another bowl, cream together brown and white sugars and shortening. Add eggs and dry ingredients. Mix well. Add oatmeal/water and mix well. Pour batter into a 9x13 greased pan. Bake for 30 minutes. Cool.

Mix topping ingredients together in a pan and boil over medium heat for 3 minutes. Immediately pour and spread evenly over cooled cake.

Submitted by Jane Deane. Jane’s parents were Helen and Elliott Smith, members at KRC since 1925.  Jane was baptized, attended Sunday School and was confirmed at KRC. In 1970 she married John Deane in the sanctuary. Jane was a Deacon at KRC during 2009 & 2010 and continues to be an active member.
